Jim and I have been together since I was 14 years old. If you do the math on that, we’ve been together for over 13 years. For us, one of the defining things in our relationship was that we were a long distance relationship for almost the entire time before we were married. We met and started “talking” in Kansas City, but then my family moved to Northern Virginia. 3 years later, we moved back to Kansas City, but Jim had moved to Joplin for school.
We always made it a point to see and visit each other as often as we could- usually every few months or so, and we always tried to make it really special. One of the big things we did was cook dinner together for the very first time.
I always remember this, because I never did much cooking at home. Yet here I was throwing together a meal, while simultaneously trying to impress my super cute boyfriend who I rarely got to see and spend time with.
That night we cooked spaghetti together. We also made garlic bread and brownies. Nothing overly fancy. Just quick, easy, comfort food at it’s finest.
I think I was able to manage my nervous stomach to actually enjoy our dinner and I must have impressed him enough because he married me two and a half years later 🙂
One meal that we have always kept in our rotation at the Spena house is spaghetti night. We all love it. I love how quick and simple it is to fix and we all love how it tastes. We’re no longer cooking pasta in my parents kitchen. We’re cooking it in our own while our two daughters play in the next room.
We no longer have to hug each other good night and go to sleep in separate rooms or go without seeing each other for months. We’re sharing an incredibly good life together, step by step, in unison, building memories and traditions of our own.
And gathered around the table at the end of a full day, enjoying a delicious home cooked meal made with as much love as it can possibly handle, I can’t help but think about how that 15 year old girl and that 18 year old boy had so much good ahead of them that they couldn’t possibly fathom it even if they tried.
